A Highland single malt, these have rounded, firm dry character with some peatiness. The job of creating the most popular single malt of all is allotted to the Sixteen Men of Tain, who today turn pure water from the distillery's own Tarlogie Springs into the delicate and complex Glenmorangie. At a height of 17 feet, Glenmorangie's unique stills are the tallest in Scotland. Their height means that only the lightest and purest vapours ascend to the top, thereby banishing any harsh flavours prior to maturation. Finest oak Bourbon casks are laid in dark, earth-floored warehouses, which are permeated by the gentle fresh sea air of the Dornoch Firth. The 10 year old featured here has a subtle taste of candied fruit and orange peel married with the honey wood sweetness from the casks.

The distillery at Kirkwall in the Orkneys, in existence since 1798, is the most far flung in the British Isles today. This area is so uncompromisingly wild that it caused early geographers to refer to it as the northernmost fringe of the inhabited world. It is with this heritage that the succulent whisky from Highland Park has progressed from its illicit origins to the exceptional product that it is today, made to the same exacting standards as it has always been. The rich, succulent complexity of this single malt inspires passion in single malt enthusiasts everywhere. A Speyside single malt, these are noted in general for their elegance and complexity, and often a refined smokiness. Whisky has been distilled legally on the current site at Craigellachie since 1824 and it is from this date that The Macallan can claim to have been in existence. Situated well beyond the malt whisky trail, this magnificent single malt stands confident of being one of the finest malts in Speyside, if not Scotland. The distillery uses unusually small stills which are all direct fired, meaning that contact between the liquid and copper is relatively high. This leads to a more refined and less oily spirit. The Macallan Fine Oak is matured in three different types of barrel: European oak seasoned with sherry, American oak seasoned with sherry and American oak seasoned with bourbon. This 10 year old malt is pale straw in colour with a fruit and heather honey nose, and a soft and malty palate which is balanced with oak and fruit.

Old Pulteney £25.94
A Highland single malt, these have a rounded, firm, dry character with some peatiness. The Old Pulteney distillery in Wick holds the record for being the most northern distillery on the British mainland. Just eighteen miles south of John O Groats, this windswept town has housed its small and traditional distillery since 1826. Historically the stills were fired by peat, and the water used from the Loch of Hempriggs was prized for its peatiness. The geographical location and close proximity to the ocean seems to have a profound effect on this amber malt, claiming a nose of salt and sea spray together with a sweeter trace of walnut cake, whilst being clean and aromatic on the palate.
